Italy Creative wants to share with you some typical recipes that you will experience once you’re back, especially if you partecipate to one of our cooking classes and gourmet tours!

Pasta alla Carbonara

Ingredients (for 2 persons)
7 oz spaghetti, 3 oz bacon (cubes), 1 egg , 1.5 oz grated parmesan cheese , 3 tablespoons olive oil, black pepper

Directions Saute the bacon with the oil in a large pan for 5 minutes. Beat the egg in a small bowl together with the parmesan cheese and some freshly ground black pepper until you obtain a dense and creamy mixture (your fork will say still inside the cream as in the picture below). Bring 3 liters of water to the boil, add 2 tablespoons of cooking salt, then boil the spaghetti “al dente”, for the time written on the package (usually 6-8 minutes). Drain the spaghetti and add them to the pan (almost cold), mix all to coat the pasta with the oil, then add the egg’s cream and mix again. Serve at once and remember that the bacon will stay mainly in the bottom of your pan.

Suggested Wineswhite wine, medium  (for example Soave Doc,  Classic Valpolicella)

Bruschetta al pomodoro

A simple yet a tasty recipe, specially if you love tomatoes and garlic, as a perfect way to start almost any meal. The key is to use very tasty tomatoes, better if they are in season.

Ingredients (for 4 persons)
Bruschetta: 1 Loaf Crusty Italian Bread, 2 Cloves Garlic, 1/4 Cup Good Olive Oil
Tomato Topping: 3 Cups Ripe Tomatoes, Cut Into 1/2 Inch Pieces, Salt & Pepper, 2 Tablespoons Olive Oil, 3 Tablespoons Fresh, Chopped Basil

Directions: Mix together the tomato topping ingredients and set aside. Cut the bread into slices about 3/4 inches thick, and either place under a broiler, or on grill, and cook untill just golden. Turn and repeat. Take the bruschetta away from heat, and first using a clove of garlic on the prongs of a fork, rub one side of each of the toasts. Next brush a little olive oil on each toast. Top with the tomato mixture and serve immediately.

Suggested Wineswhite or red wine, depends on your preferences (for example Bianco di Custoza Doc Sangiovese, Chianti)

Risotto alla milanese

Ingredients (for 4 persons)

6 Cups Chicken Broth (heated), 6 Tablespoons Unsalted Butter (2 Tbsp Removed To Finish The Dish, 1/2 Cup Finely Chopped Onion, 2 Cups Arborio Rice, 1/2 Cup Dry White Wine, 1 Teaspoon Of Saffron Threads Soaked In A Little Stock, 1/2 Cup Grated Parmesan Cheese


Heat the 4 tablespoons of butter in a heavy saucepan. Add the onions and cook until they are translucent, then add the rice and stir until it is well coated with the butter. Pour in the white wine next, and stir continually over medium heat until it is absorbed. Start to add 1/2 cup of hot broth, stirring as it is absorbed. Continue in this manner, adding ladles full of hot broth, and stirring continuously for about 20-25 minutes or until the rice is cooked, but remains slightly firm to the teeth. About 5 minutes before completion, add the saffron. Remove from the heat, add the remaining butter and the parmesan cheese. Serve, offering additional cheese if desired.

Suggested Wines: white or red wine, depends on your preferences (for example Soave Doc, Pinot Grigio, Pinot Nero, Barolo, Dolcetto)

Catering: wide variety of catering, differentiating location category and location, generally offering 5/6 courses, with a wide variety of wines.
